Today is October 5 and it's Apple Brown Betty Day. It's an answer to what to do with apples that might be getting that leathery texture on the outside but still have plenty of flavor. My favorite kind are Honey Crisp, but a less expensive kind is Gala or the tart Granny Smith.

An apple betty—or apple brown betty—is similar to an apple pie, but has buttered and sweetened crumbs instead of a crust. Bettys may also be made with other fruits such as berries or pears, and their main seasonings are sugar, cinnamon, and nutmeg. They are often topped with a lemon sauce or whipped cream. Another sinfully caoloric toping is French Vanilla Ice Cream. The apple betty is American as apple pie, having been eaten during colonial times, mentioned in print in 1864, and eaten by Ronald and Nancy Reagan while they were in the White House—being one of their favorite desserts.

Here's a recipe. prep: 30 mins cook: 45 mins total: 1 hr 15 mins Servings: 8

4 cups thinly sliced apples (I leave the peels on my apples bujt you can peel them if you like)

¼ cup orange juice

¾ cup all-purpose flour

1 cup white sugar

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1 pinch salt

½ cup butter

How to do it.

Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9 inch pie plate.

Mound sliced apples in the pie plate. Sprinkle with orange juice.

In a medium bowl, mix the flour, sugar, cinnamon, nutmeg, and salt.

Cut in butter until the mixture resembles coarse crumbs.

Scatter over the apples.

Bake in preheated oven for 45 minutes. Serve warm.

Have you ever noticed that certain things in nature are harmonic?

When I was preparing my new house for my eventual move last year, I noticed a peculiar berry on a tree at the edge of my soon-to-be new neighbor's yard. It had these funny-looking berries. In Spring of 2020 we all know what happened. Covid-19 arrived. Confronted by daily images of the spikey red virus, I was reminded of these berries, which I had assumed were not edible.

I did some research and here's what I found It's a particular kind of dogwood tree. At my old house I had 2 dogwood trees but neither one produced anything but shiny red berries (Wrong kind Jamaican dogwood - do not eat)

Overview Information

American dogwood is a tree. Historically, people made medicine from the bark. American dogwood bark is still used today as medicine, but not very often. People use American dogwood for headaches, wounds, fever, ongoing diarrhea, and other conditions, but there is no good scientific evidence to support these uses. Be careful not to confuse American dogwood with Jamaican dogwood.

But then another site said this: How does it work?

American dogwood might have some effects against malaria.

Ongoing diarrhea.

Loss of appetite.

Boils and wounds, when applied to the skin.

Other conditions. This year there weren't many berries, but I recall one of the discredited cures for covid was malaria medicine and just between you and me I thought Malaria? No I'm not going to go strip trees of the berries and make jams and teas, but I do find it somewhat curious that there's a passing resemblance between this berry and the virus and the word malaria is mentioned...but that's how conspiracies and snake oil remedies get started... LOL!

This Week Visionary Author Gerald

Stanek wrote about Rosa Mundi, his latest novel

One story line in my latest novel follows a millenarianist sect, that is a group who believe in the coming fundamental transformation of society, after which "all things will be changed”. There have been dozens if not hundreds of such groups throughout history, some religious, some not. Many claim to have discovered or revealed an apocalyptic timetable, frequently hidden in a sacred text of one sort or another, which they point to as evidence they know exactly when such a transformation will happen. When the appointed time comes and the transformation fails to manifest, these groups either recalculate the date of the ‘end times’, remove any specific date from their doctrine so as to keep the faith indefinitely, or they disband and are forgotten.

Part of what instigated 𝑹𝒐𝒔𝒂 𝑴𝒖𝒏𝒅𝒊 was the supposition: what if one of those forgotten groups was right and the rest of us never knew? What if all things changed 𝒇𝒐𝒓 𝒕𝒉𝒆𝒎?

Millenarianism continues to flourish, perhaps because the vast majority of people are not happy with the way things are in their life or their society. In certain strains of the Ancient Wisdom tradition, the date of 2025 has been floating around for decades as the year in which, perhaps, things will change.

What do you think? Is a fundamental transformation of society in the offing?

Here's a reprise on an article I wrote earlier!

Finding a “Next” in uncertain times.

My spouse and I have discussed this so many times on our walks in nature that it sounds like a refrain to a song. What shall we do next? We’re not alone and these are truly first world problems of those who have fulfilled basic needs, wants and safety.

We’re of an age where the nest is empty and days tick on to retirement. We’ve lived long enough to have stood nearby as our parents passed away and seen how aging can fill someone with hopelessness and bitterness – pain and debility, but we still have enough fight in us to “Not go Quietly”.

But what’s next? Do we wait for the inevitable, wondering when it will happen or ignore that it might and putter on in a dreary job just to have a spacer for the time.

What will be next? Will we find it rewarding or will it be just another time-filling spacer. So much of our feeling and our answer is about attitude and that level of Maslow’s pyramid (Thanks for the email hint Allysha Lavino) called the Esteem needs. What do we need?

One of my readers, Charles Patton, answered my last post’s question about doing what one was born to do in this manner:

“I had read somewhere about a certain personality type who .. begin projects, whether difficult or not, and once finished move on to something completely different because of the been there done that thought process and doing something similar again would end up being boring and redundant.. So that is kind of where I am at in life.... continually trying new things, completing them and moving on...” and he has.

I also get the impression the new adventures are not exactly about pursuing the brass ring. Try new things. Maybe don’t even worry if they are useful, thrifty, profitable or will bring ecstatic enjoyment. Look with different eyes at old things.

I recently submitted a short story entitled “Night Route” about a bus driver confronted by retirement after a life and career that he used to insulate himself from his failed marriage and loss of his family. He finds himself constantly dreaming, but also trying to find ways to stay on the job so he won’t be enveloped by the reality that, for him, there is no “next” except being at home and watching television shows about others who pursued the dreams he once had. He’s enjoyed driving the bus, but knows it, like he faces a cutback because no one rides the line any more.

Tonight, my old blue bus shambled on, creaking and in need of repair – like me. Even though I’d tried to keep her up and turned in plenty of work orders, they were ignored. The letter on the dash nagged as if it was trying to tell me something too: (Without work, I’d be) just wasting my life watching the Boatman’s Paradise channel.

At the same time, what I saw could have been a million years ago. Funny thing about time and routines. They start blurring into one unbroken mess of events that poke their heads up from time to time like a crate full of chickens headed to the slaughterhouse.

Sally Jean left me a long time ago. First her heart left me and then the rest of her followed. I just can’t recall if it was somewhere after our first boy Matty was born. Maybe it was later when the car wreck gave her the bum knee and she had to give up her waitressing job at the diner.

She was always there at home until she wasn’t there; cleaning the house and cooking the food – seeing the boys got to school and then going to the church whenever they opened the doors. Somewhere along that timeline Sally Jean ran off with the preacher and they took the boys with them.

I didn’t put up a fight. I just kept the house and a half broke car and went on driving my route. I hear they died a few years back of too many of those pain pills she wanted me to take. Never figured what happened to the boys. I guess they’re off somewhere with families of their own. There’s no one home now except the junk and the memories they left. I drive on; finding solace in the routine.

What’s next? In Charley Charonski’s next from “Night Route”, something magical and mythical happens one night when he sees a terrible accident. For the rest of us it’s still a crossroad and a decision to embrace.
