It's a holiday to celebrate and enjoy popular, tasty pecans. "Pecan" is from an Algonquian word, meaning a nut requiring a stone to crack. A pecan is not truly a nut, but is technically a drupe, a fruit with a single stone or pit, surrounded by a husk. Pecans are a good source of protein and unsaturated fats.

Like walnuts (which pecans resemble), pecans are rich in omega-6 fatty acids, although pecans contain about half as much omega-6 as walnuts.

A FAVORITE SOUTHERN ROOTS PIE It's impossible to go wrong with pecan pie. Makes 8 servings Active Time 35 min Total Time 5 hr (includes making pastry and cooling pie)


Pastry dough - I use pre-rolled pie crust, but you may make a crust yourself. 3/4 stick unsalted butter 1 1/4 cups packed light brown sugar 3/4 cup light corn syrup 2 teaspoon pure vanilla extract 1/2 teaspoon grated orange zest 1/4 teaspoon salt 3 large eggs 2 cups pecan halves


Preheat oven to 350°F with a baking sheet on middle rack.

Roll out dough on a lightly floured surface with a lightly floured rolling pin into a 12-inch round and fit into a 9-inch pie plate. Trim edge, leaving a 1/2-inch overhang. Fold overhang under and lightly press against rim of pie plate, then crimp decoratively.

Lightly prick bottom all over with a fork. Chill until firm, at least 30 minutes (or freeze 10 minutes). Meanwhile, melt butter in a small heavy saucepan over medium heat. Add brown sugar, whisking until smooth. Remove from heat and whisk in corn syrup, vanilla, zest, and salt. Lightly beat eggs in a medium bowl, then whisk in corn syrup mixture. Put pecans in pie shell and pour corn syrup mixture evenly over them. Note I also decorate the top with more pecans Bake on hot baking sheet until filling is set, 50 minutes to 1 hour. Cool completely. \

“I’ll hunt you, Shepherd.” Cain’s voice hardened and sounded tinged with spittle like he was seething.

“You’ll hunt me.” Star had to acknowledge the truth that Cain would never stop the pursuit.

“You won’t have a place to hide. I’ll see to that.” Cain’s voice edged into something colder.

“Then I won’t, Admiral.”

“There’ll be a point where you can’t run any longer, Shepherd.”

There was truth to that too. And when it came, Star would do what was necessary.

“Then I’ll stop and face you. But until that time, I’ll run. I’ll do my job. And I’ll keep me and mine safe.”

Star gripped the helmet, fingers pressing against the visor. “And when we do meet again, keep that in mind, Admiral.”

Silence hung through the channel.

Star leaned closer to the comms. “When push comes to shove, we’ve all got a side of us that needs letting out. And you’ve pushed mightily, Cain. So, here’s me telling you, don’t push me any further. Don’t shove. Because you won’t like what comes out—and you won’t survive it.”

Ahiko threw his head back and howled in triumph.

“Got it. Cut it, Shepherd.” Star flipped the comms to dead.

The Hangar door groaned and shuddered as it opened.

Ahiko didn’t wait for Star’s cue, and he keyed in a jump. Star arched a brow.

“You ever do that out of a hangar bay before?” The pilot gave him a lopsided smile.

“No.” Ahiko pushed up on the throttle.
